Crockpot Green Chicken Enchilada Casserole with Rice
Enchilada night, minus the rolling. This crockpot green chicken enchilada casserole swaps the tortillas for rice. We have chicken breast, black beans, corn, and onion that cook in green enchilada sauce all afternoon, then microwave brown rice and a little cheese go in for the last 15 minutes and soak up the sauce. It’s gluten-free it feeds 6 to 8, and the sauce does all the seasoning for you.

We're back with anaother "Crock-tober" recipe and this one is incredibly weeknight-friendly. Most enchilada casseroles are layers of tortillas under a whole lot of cheese. I skipped the tortillas, used rice, and kept the cheese to one cup for the entire pot. It still tastes like a Mexican casserole.

Ingredients & Notes
- Green enchilada sauce - This is the seasoning and the liquid, so it’s the one ingredient I wouldn’t swap. I used Siete. If you need it gluten-free, check the label on yours.
- Chicken breast - You could also use chicken thighs too.
- Black beans and corn - One can of each. Drain them both (and rinse the beans).
- Onion and green chilies - The diced onion cooks down with the chicken. The green chilies are optional.
- Brown rice - I use two pouches of microwaveable brown rice because it’s easier and cooks in about 3 minutes. It goes in at the end and soaks up the sauce.
- Mexican cheese - Just one cup for the whole pot, stirred in with the rice. Use dairy-free if you need to.
- Toppings - Greek yogurt, crushed tortilla chips, avocado, and cilantro.

Ansley's Tips
- Use microwave rice. Two pouches take about 3 minutes, and they go in already cooked.
- Shred the chicken right in the crockpot to make clean up a breeze!
- Don’t skip the last 15 to 20 minutes on HIGH. That’s when the rice absorbs the extra liquid.
- You’ll have leftovers! This makes 6 to 8 servings.
How to Store Leftovers
Transfer the casserole into an airtight container and store it in the fridge for up to 4 days. When ready to enjoy heat up a serving in the microwave for 30 second intervals or heat up in a pot on the stove with a splash of water to help loosen up the rice.

Crockpot Green Chicken Enchilada Casserole with Rice
Ingredients
- 1 ½ lb chicken breast
- 1 onion - diced
- 15 oz 15 oz jar green enchilada sauce - (I used Siete)
- 4 oz 4 oz can diced green chilies - optional
- 15 oz 15 oz can black beans - drained and rinsed
- 15 oz corn
- 4 cups cooked brown rice - 2 microwaveable pouches
- 1 cup shredded Mexican cheese - dairy-free if needed
Toppings
- Plain Greek yogurt
- Crushed tortilla chips
- Avocado - diced
- Fresh cilantro - chopped
Instructions
- Add the chicken breast, onion, green enchilada sauce, green chilies (if using), black beans, and corn to the crockpot. Cover and cook on LOW for 4 to 6 hours or HIGH for 2 to 3 hours, until the chicken reaches 165°F and shreds easily.1 ½ lb chicken breast, 1 onion, 15 oz 15 oz jar green enchilada sauce, 4 oz 4 oz can diced green chilies, 15 oz 15 oz can black beans, 15 oz corn
- Shred the chicken in the crockpot with two forks.
- Microwave the rice according to the package directions. Add the rice and cheese to the crockpot and toss until the rice is coated in sauce.4 cups cooked brown rice, 1 cup shredded Mexican cheese
- Cover and cook on HIGH for 15 to 20 minutes, until the rice absorbs the extra liquid and the mixture has a casserole texture.

Dairy-free: use dairy-free cheese and swap or skip the Greek yogurt.
