This Crockpot Hawaiian Chicken is saucy, sweet, and savory and a weeknight dinner classic. The chicken, veggies, and sauce cook low and slow all afternoon. The chicken is tender enough where it falls apart with tongs. Serve it over rice for a tropical dish the whole family will love.

My Kid's Favorite

This one’s on our weeknight rotation mainly because my kids love it! When we’re stuck in a chicken-and-rice rut, this switches up the flavor without me having to convince anyone to try something new. The chicken comes out super saucy and sweet from the pineapple, with just enough umami from the coconut aminos to keep it from tasting like dessert.

A woman with long red hair, wearing a brown sweater and jeans, smiles while standing in a modern kitchen beside a counter with fresh lettuce and hibachi steak bowls. Marble backsplash and gold kitchen accents are visible in the background.

The best part is it still feels like a fun dinner even though I barely did anything. Spoon plenty of sauce over the rice, and don’t be surprised when the bowls come back empty!

A person sits cross-legged in a meditation pose with their hands resting on their knees, peacefully imagining delicious hibachi steak bowls. The simple black outline contrasts against a white background.

If you’re craving the Asian-leaning cousin, my crockpot honey garlic chicken and rice is the one. This one is the tropical take. Still working through Crock-tober? Grab my shortcut crockpot birria tacos or crockpot chicken tortilla soup for the rest of the week.

Ingredients & Notes

  • Chicken thighs - Thighs hold up over a long cook and still pull into tender pieces at the end instead of falling apart. Chicken breasts work here too.
  • Canned pineapple rings + juice - The juice goes into the sauce and the rings go on top. That’s where the tropical flavor comes from, so there’s no need to pile on extra sugar.
  • Coconut aminos - This is the savory base. Soy sauce works too, but use tamari if you need it gluten-free.
  • Honey + ketchup - Just enough sweetness and body.
  • Rice vinegar, garlic, and ginger - These keep it from tasting one-note sweet. Fresh ginger is best but ground works in a pinch.
  • Arrowroot starch - Used to thicken up the sauce. Corn starch works too.
  • Red bell pepper + red onion - These add color and a little bite against all that pineapple.
