I may have a new bff and her name is Tahini. I don’t know why I’m just now discovering this masterpiece but she’s here to stay. With a slight nutty flavor and the consistency of peanut butter, Tahini pairs well practically anything. You may have seen her in your salad dressings or hummus dip, but mixed in with something sweet like chocolate and coconut sugar and the result is wonderful. I’m wiling to bet these Tahini Chocolate Chunk Cookies may be your new favorite cookie!


What the Heck is Tahini?
Good question. Tahini is, simply put, ground up sesame seeds. There are various types, of course - dark roasted. light roasted, black tahini (made from black sesame seeds). Tahini should be creamy and slightly nutty but above all, addicting AF. Think of it as peanut butter’s cousin. When’s the last time you dove into a jar of peanut butter spoon first and put the lid back on after only a teaspoon? Probably never, if you’re anything like me. Tahini is basically the same. Really good tahini can be hard to find. I’ll save you the trouble of searching and just tell you, this one is the BEST!

Description

Ingredients
- 2 cups almond flour
- ⅓ cup tapioca flour
- ½ tsp baking soda
- 1 tsp baking powder
- ¼ tsp sea salt
- 2 eggs
- ⅓ cup tahini
- ¼ cup coconut sugar
- 1 tsp vanilla
- 2 Tbsp coconut oil (melted then cooled)
- ½ cup chocolate chunks
Instructions
- Preheat oven to 350 F
- In a bowl, whisk together the almond flour, tapioca flour, baking soda, baking powder, and sea salt; set aside
- In a large bowl, mix the eggs, tahini, coconut sugar, vanilla, and coconut oil until thoroughly mixed
- Fold the flour mixture into the bowl with the eggs until no flour clumps remain; mix in the chocolate chips
- Using a spoon, roll dough into golf-ball sized balls, then pat down to form a disk. Place on greased baking sheet and bake for 10 - 12 minutes until the edges turn golden brown
- Enjoy warm out of the oven or store in an air-tight container in the fridge for up to a week
