Step 1 : Toast the hazelnuts
Toss the nuts in a little coconut oil and roast them in the oven until they turn a golden/darker brown.
Step 2 : Pulse in food processor
Pulse the toasted hazelnuts and remaining crust ingredients in a food processor until it begins to stick together.
Step 3 : Press into pan
Transfer the crust to the pan and press gently with the back of a measuring cup or spoon. Bake in oven then set aside.
Step 4 : Melt the chocolate
Melt your chocolate on the stove. Set the chocolate aside to cool a bit while you prepare the rest of the cheesecake filling.
Step 5 : Prepare the filling
Prepare the cheesecake filling and fold in the melted chocolate.
Step 6 : Bake!
Bake the cheesecake in the oven. Gently nudge the pan with an oven mitt to check if it's done. If it jiggles a tad like jello, then it's done!
Step 7 : Top with chocolate ganache
Prepare the chocolate ganache and pour over top of the cheesecake. Level off the top with an uneven spatula.
Top with chopped hazelnuts and enjoy!
