Creamy & Crunchy Healthy Broccoli Salad

A delicious and nutritious broccoli salad packed with fresh, crunchy vegetables, sweet dates, and creamy avocado-style mayo.  This salad makes the perfect side dish, nutritious snack, or meal with some added protein!  It’s the broccoli salad you’ve been waiting for.

  • Cut the florets off the broccoli head into bite sized pieces add to a large mixing bowl
  • Dice red onion and add to the mixing bowl along with the shredded carrots, slivered almonds, and chopped dates
  • Mix the vegetables in the bowl and then add the mayo, salt, and pepper and continue to mix until ingredients area all well combined
  • Store in an airtight container in the fridge for up to 5 days! (best enjoyed cold)

Notes

*Note : This mayo can be found at most local grocery stores. However, plain greek yogurt or a light mayo are great alternatives.
