Paleo Cookie Skillet

This chocolate chip cookie skillet is ooey, gooey, and oh so chocolatey! Think soft and chewy cookie with a crisp crinkly crust served hot right out of the oven. Made with wholesome ingredients making it both gluten free and dairy free, it's a healthier take on the classic pizookie!

  • Preheat oven 350. In a large bowl, whisk the egg, coconut sugar, cashew butter, and vanilla together until airy and creamy.
    1 egg, ⅓ cup coconut sugar, ¼ cup cashew butter, 1 teaspoon vanilla
  • Fold in the almond flour, baking soda, and sea salt and mix until no flour clumps remain; don't over mix.
    1 ⅔ cup almond flour, ½ teaspoon baking soda, ¼ teaspoon sea salt
  • Stir in the chocolate chips and pour the batter into a greased 8-inch cast iron skillet. Bake for 20 - 25 minutes until the edges turn golden brown.
    ½ cup chocolate chips
  • Serve warm with a couple scoops of ice cream, if desired, and enjoy!

Note : double the recipe if using a 13-inch skillet.
