Healthy Banana Bread Oat Flour

Ingredients

  • 3 bananas
  • 3 eggs
  • cup coconut sugar
  • ½ cup Greek yogurt
  • 3 tablespoon avocado oil
  • 1 teaspoon vanilla extract
  • 1 ¾ cup oat flour
  • 1 ½ teaspoon baking powder
  • ¼ teaspoon sea salt
  • ½ cup chocolate chips optional (plus more on top if desired)

Instructions

  • Preheat oven to 350 F. Meanwhile, mash the bananas on a plate about 90% of the way fully mashed. You want a few chunks of banana left.

  • Pour the mashed banana mixture into a large bowl and add the eggs, coconut sugar, greek yogurt, avocado oil, and vanilla extract. Whisk well to incorporate.

  • Fold in the oat flour, baking powder, and sea salt until the flour is 90% combined

  • Add the chocolate chips and fold into the batter a few times.

  • Grease an 8-inch loaf pan and line with parchment paper for easy clean up. Pour the batter into the pan and top with a handful of chocolate chips on top if desired.
  • Bake the bread in the oven for 50 - 55 minutes until you can insert a toothpick into the center and it comes out clean.
  • Allow the banana bread to cool slightly before slicing into pieces and enjoy!

Notes

Storage : The best way to store this banana bread is in an airtight container in the fridge where it will keep for up to a week. Because it's made with natural ingredients, the coolness of the fridge will keep it the freshest. However, it will stay good left out on the counter in an airtight container for about 4 days as well.
