Banana Mug Cake Recipe

Ingredients

  • 1 ripe banana
  • 1 egg yolk
  • 2 tablespoon coconut sugar or light brown sugar
  • 3 tablespoon oat flour you can also use all purpose flour or gluten free 1:1 flour
  • 1 teaspoon avocado oil or any neutral oil
  • ½ teaspoon vanilla
  • ¼ teaspoon cinnamon
  • ¼ teaspoon baking soda
  • Small pinch sea salt
  • 2 tablespoon chocolate chips optional

Instructions

  • Mash the banana up in a mixing bowl, leaving a few little clumps.

  • Add the egg yolk, coconut sugar, oat flour, avocado oil, vanilla, cinnamon, baking soda, and sea salt to the bowl and mix until the flour is incorporated.

  • Fold in the chocolate chips.

  • Pour the batter into a greased large microwave safe mug or ramekin.
  • Microwave on high for 2 minutes. The mug cake will puff up tall in the microwave and will fall back down. Carefully remove the mug from the microwave, it will be hot.
  • Let the cake cool down for 1 minute. Top with toppings like ice cream, whipped cream, nuts, etc. if desired and enjoy!

Notes

Storage : This recipe is best served right away while it’s still warm. However, if you have leftovers, you can cover them with a lid or transfer them to an airtight container. They will stay fresh in the fridge for up to 3 days. I recommend eating any leftovers cold as they’re likely to become rubbery if reheated.
