Banana Bread in a Mug

What is a Mug Cake?

A mug cake is a type of single-serving cake, or in this case banana bread. It features the same ingredients you expect to see in full-sized recipes. However, everything combines in a single mug and “bakes” in the microwave. 

There are lots of variations including lemon mug cake, chocolate chip cookie gluten-free mug cake, and vegan mug brownie mug cake. However, this banana mug cake recipe might be my favorite. It has all the taste and texture of my chocolate chip banana bread with a fraction of the work! 

Whip it up in minutes, and enjoy it warm for breakfast. Or, add your favorite toppings for an indulgent dessert.

Banana Mug Cake Ingredients and Notes

  • Banana - Slightly brown and soft is best. Try to avoid using a green/light yellow banana as it will be a little stiff and won't provide the moisture needed.
  • Egg yolk - This creates a rich flavor and keeps the single serve banana bread moist. 
  • Coconut sugar - Used to sweeten the batter, enhancing the banana flavor. Light brown sugar will also work. 
  • Oat flour - This forms the base of the batter, making this banana mug cake recipe gluten free. However, all-purpose flour or a gluten free 1:1 all-purpose flour will also work. 
  • Avocado oil - This is used in place of butter, adding a boost of healthy fats without impacting the flavor of the bread. Any type of neutral oil like coconut oil or vegetable oil will work too.
  • Cinnamon - Adds extra depth and enhances the sweetness. 
  • Chocolate chips - These are optional but highly recommended as they add little pockets of melty goodness to every bite. Dark chocolate is my go-to, but semi-sweet chocolate will also taste great. This Enjoy Life brand is my go-to, but any chocolate chips or chunks will work in this recipe. Opt for dairy-free varieties if needed. 

How to Make Banana Bread in a Mug

Step 1: Mash the banana. Use a fork to mash the banana in a mixing bowl, leaving a few little clumps. 

Step 2: Combine the ingredients. Add the egg yolk, coconut sugar, oat flour, avocado oil, vanilla, cinnamon, baking soda, and sea salt to the bowl. Mix until the flour is incorporated. Then, fold in the chocolate chips.

Step 3: Microwave. Pour the batter into a large, greased microwave-safe mug or ramekin. Microwave on high for 2 minutes. Carefully remove the mug from the oven. It will be hot!

Step 4: Serve. Let the banana cake cool slightly. Then, add your favorite toppings, and enjoy! 

Expert Tips

  • Use very ripe bananas. The browner they are, the easier they’ll be to mash and the sweeter your bread will be! If you don’t have ripe bananas, you can speed up the ripening process by baking them at 350 degrees Fahrenheit for about 6-8 minutes or until the peel is dark brown. 
  • Avoid overmixing the batter. Stir the ingredients just until no streaks remain. Continuing to mix will result in dense, tough banana bread in a mug. 
  • Try not to open the microwave once the banana bread starts to cook. It will interfere with the cooking time.
  • The mug or ramekin will be very warm once the banana mug cake has cooked. Allow it to cool down slightly before removing it from the microwave.

Serving Suggestions

This single serve banana bread is plenty flavorful on its own. That said, if you really want to treat yourself, try topping it with options like:

  • Peanut Butter Drizzle

How to Store Single Serve Banana Bread

This recipe is best served right away while it’s still warm. However, if you have leftovers, you can cover them with a lid or transfer them to an airtight container. They will stay fresh in the fridge for up to 3 days. I recommend eating any leftovers cold as they’re likely to become rubbery if reheated.

Frequently Asked Questions

Why did my mug cake turn out rubbery? 

Make sure your baking powder is fresh, and be careful to mix the ingredients just until no streaks remain. Continuing to mix will overwork the batter and cause the banana mug cake to become rubbery.

Why is my mug cake so dry? 

If your mug cake turns out dry, it’s likely because it was overcooked. Keep a close eye on the microwave! The mug cake will puff up tall in the microwave and will fall back down when it’s ready. 

Can I use water instead of milk in a mug cake? 

This recipe doesn’t call for additional liquid. However, if a mug cake recipe calls for milk, you can typically use water instead. The flavor will likely just be slightly less rich.

  • 1 ripe banana
  • 1 egg yolk
  • 2 tablespoon coconut sugar - or light brown sugar
  • 3 tablespoon oat flour - you can also use all purpose flour or gluten free 1:1 flour
  • 1 teaspoon avocado oil - or any neutral oil
  • ½ teaspoon vanilla

Instructions

  • Mash the banana up in a mixing bowl, leaving a few little clumps.

  • Let the cake cool down for 1 minute. Top with toppings like ice cream, whipped cream, nuts, etc. if desired and enjoy!
