Best Ever Guacamole without Tomatoes

Ingredients

  • 4 avocados
  • 1 jalapeño minced and muddled
  • 2 garlic cloves minced and muddled
  • 2 limes juiced
  • ½ cup red onion finely diced
  • ½ teaspoon sea salt
  • ¼ teaspoon onion powder
  • ½ cup cilantro finely chopped

Instructions

  • Remove the skin and pits from the avocados and add the flesh to a mixing bowl. Use a fork to lightly mash up the avocado intl larger chunks. Make sure not to overmash, you want some chunks in the guacamole.

  • In a mortar, or sturdy bowl, with a pestle, or a muddler, grind up the jalapeño and garlic until the juices have been extracted and they’ve been broken up into small pieces.
    1 jalapeño, 2 garlic cloves
  • Add the juices and mashed up jalapeño and garlic to the bowl with the mashed avocados along with the lime juice, red onion, sea salt, onion powder, and cilantro. Lightly mix with a fork into the avocado mixture.
    2 limes, ½ cup red onion, ½ teaspoon sea salt, ¼ teaspoon onion powder, ½ cup cilantro
  • Serve the guacamole in a bowl with tortilla chips and enjoy!

Notes

Storage : Transfer leftover guacamole to an airtight container. Sprinkle lemon or lime juice on top, and cover the top with plastic wrap. Store it in the fridge for up to 2 days.
