Best Ever Guacamole Recipe (No Tomato)

I’ve been making this no tomato guacamole recipe for years. Every time I do people ask what I do with it because it’s so delicious! 

My secret is to “muddle” the jalapeño and garlic. This releases the natural juices and breaks the ingredients into fine pieces. Then, we fold them evenly into the dip, infusing the entire recipe with savory, spicy flavor. 

It’s a simple technique but changes the entire flavor of the recipe with just a few fresh ingredients. Once you start making this garlic guacamole recipe, you’ll never go back to other variations or store-bought options again! 

Make a big batch for appetizers or snacks. Or, keep it on hand to add flavor and healthy fats to all your favorite recipes.

Best Ever Guacamole ingredients

  • Avocados - The star of the show! You’ll need four ripe avocados for this recipe. I recommend Hass avocados, but any variety will do.
  • Jalapeño - Adds the perfect amount of heat. Be sure to remove the membranes and seeds. 
  • Garlic - Use whole garlic cloves. Pre-minced garlic won’t work for this recipe. 
  • Fresh lime juice - Adds a touch of brightness and helps prevent oxidation, which turns guacamole brown.
  • Red onion - Includes a nice tang and satisfying crunch. 
  • Spices - Sea salt and onion powder add the perfect touch of savory flavor. 
  • Cilantro - Fresh cilantro adds a vibrant, fresh taste. 

Best onion for Guacamole

I prefer a little red onion in guacamole which is going to give it more of a bite. You can also use a yellow or white onion for a milder taste.

Whichever type you use, make sure to dice it up well. Similar to the garlic, the onion will excrete delicious juices when chopped up into small pieces which goes really well when mixed into the avocado.

Tips for Picking Ripe Avocados

This easy guacamole recipe will only be as good as your avocados. So, we want to be sure they’re ripe and ready to eat! You'll know your avocado is ripe when:

  • The exterior is dark green in color 
  • Firm but will give just slightly when given a gentle squeeze
  • Bumpy on the outside 
  • Green underneath the stem

If your avocados aren't quite ripe when you buy them, store them in a paper bag on the counter for 24 hours. They'll ripen right up!

How to make Guacamole Recipe

Step One: Mash the avocado. Remove the skin and pits from the avocados. Add the avocado flesh to a mixing bowl, and use a fork to lightly mash the avocado into chunks. Be careful not to overmash!

Step Two: Muddle. Use a pestle and mortar or a bowl and muddler to grind the jalapeño and garlic until the juices are extracted, and the ingredients are broken into small pieces.

Step Three: Combine. Add the juices, mashed jalapeño, and garlic to the bowl of avocados. 

Next, add the lime juice, red onion, sea salt, onion powder, and cilantro. Lightly mix to combine, being careful not to overmash the mixture.

How to store Guacamole without Tomatoes

Guacamole oxidizes, or turns brown, very quickly. It won’t impact the flavor of the recipe, but it’s not exactly appetizing. As a result, I recommend making this recipe just before serving. 

However, if you have leftovers you can store them in an airtight container in the fridge for up to 2 days. Squeeze lemon or lime juice over the surface of the guacamole. Then, cover with plastic wrap before adding the lid. This will prevent it from browning!

Ingredients
 
 

  • 4 avocados
  • 1 jalapeño - minced and muddled
  • 2 garlic cloves - minced and muddled
  • 2 limes - juiced
  • ½ cup red onion - finely diced
  • ½ teaspoon sea salt
  • ¼ teaspoon onion powder
  • ½ cup cilantro - finely chopped

Instructions

  • Remove the skin and pits from the avocados and add the flesh to a mixing bowl. Use a fork to lightly mash up the avocado intl larger chunks. Make sure not to overmash, you want some chunks in the guacamole.

  • In a mortar, or sturdy bowl, with a pestle, or a muddler, grind up the jalapeño and garlic until the juices have been extracted and they’ve been broken up into small pieces.

  • Add the juices and mashed up jalapeño and garlic to the bowl with the mashed avocados along with the lime juice, red onion, sea salt, onion powder, and cilantro. Lightly mix with a fork into the avocado mixture.
    2 limes, ½ cup red onion, ½ teaspoon sea salt, ¼ teaspoon onion powder, ½ cup cilantro
  • Serve the guacamole in a bowl with tortilla chips and enjoy!

Notes

Storage : Transfer leftover guacamole to an airtight container. Sprinkle lemon or lime juice on top, and cover the top with plastic wrap. Store it in the fridge for up to 2 days.
