In the bottom of a crockpot, whisk together 1 cup of the beef broth with the coconut aminos, honey, sesame oil, rice vinegar, sriracha, arrowroot starch, garlic, ginger, and salt.
1 ½ cups beef broth, ¼ cup coconut aminos, 2 tablespoons honey, 1 tablespoon sesame oil, 1 tablespoon rice vinegar, 1 tablespoon sriracha, 1 tablespoon arrowroot starch, 3 cloves garlic, ½ tablespoon fresh grated ginger, ¼ teaspoon sea salt
Add the diced onion and steak strips and toss to coat.

Cover and cook on LOW for 3–4 hours or HIGH for 1 ½–2 ½ hours, until the beef reaches your preferred doneness. Start checking at the low end of the range.
Turn the crockpot to HIGH. Scatter the broccoli over the beef, nestle the ramen blocks into the liquid, and pour the remaining ½ cup of broth over the noodles. Cover and cook for 20 minutes, until the noodles are soft and the broccoli is tender.
