Easy Zucchini Pizza Bites

- 2 zucchinis
- 1 cup pizza sauce
- 1 cup parmesan grated
- Pepperoni optional, I used turkey pepperoni
Get Recipe Ingredients
Slice the zucchini. Preheat oven to 400 F. Slice the zucchini into ½ inch thick pieces. I like to use the largest setting on a mandolin but you can also use a sharp knife.
Assemble. Dip each zucchini round in the pizza sauce to lightly coat it then dredge in parmesan. Place the coated zucchini on a baking sheet with parchment paper or aluminum foil. Repeat with another 1 - 2 zucchini rounds and stack on top of each other. You can add a pepperoni slice in between the layers if desired. I like to have some with pepperoni and some without if serving for a crowd. Repeat this step with all of the remaining zucchini rounds until you have stacks. Be careful not to stack too high or they may tip over as the cheese melts. Bake in the oven for 20 - 30 minutes until crispy.
Serve. Plate the zucchini bites while warm and serve with additional pizza sauce, if desired, and enjoy!
