Ingredients

  • cup rolled oats
  • ½ cup milk of choice I use almond milk
  • ¼ cup espresso about 1 shot
  • ¼ cup greek yogurt
  • 1 tablespoon chia seeds
  • ½ tablespoon maple syrup
  • 1 teaspoon cocoa powder
  • ½ teaspoon vanilla extract
  • teaspoon sea salt

To assemble

  • 2 tablespoon chocolate chips; melted optional

Instructions

  • In a jar, add the rolled oats, milk, espresso, greek yogurt, chia seeds, maple syrup, cocoa powder, vanilla extract, and sea salt. Mix with a spoon until well combined.
    ⅔ cup rolled oats, ½ cup milk of choice, ¼ cup espresso, ¼ cup greek yogurt, 1 tablespoon chia seeds, ½ tablespoon maple syrup, 1 teaspoon cocoa powder, ½ teaspoon vanilla extract, ⅛ teaspoon sea salt
  • Melt the chocolate in the microwave in 8 second increments until thin and melted.
    2 tablespoon chocolate chips; melted
  • Pour the chocolate on top of the oats until it covers the top. Secure the lid on the jar and transfer to the fridge overnight.
  • The next day, enjoy with a spoon to break the chocolate shell and dig in!

Notes

Storage : These overnight oats will keep for up to a week in the fridge when stored with an airtight lid.
