Want to know the only thing better than a hot cup of coffee in the morning? A coffee-infused breakfast, of course! I love to add bold coffee flavor to recipes like coffee doughnuts. However, my favorite breakfast option is this coffee overnight oats recipe. 

Loaded with rich chocolate and coffee flavors it tastes like dessert. However, it’s super nutritious, too, thanks to the oats, Greek yogurt, and chia seeds. Even better, all the ingredients combine in minutes and are ready to grab and go the next day. 

I highly recommend preparing several servings at once. Then, you’ll have a breakfast you’ll look forward to waking up to, and mornings will go super smoothly!

Coffee Overnight Oats Ingredients and Notes 

  • Oats - The star of the show! You’ll need rolled oats for this recipe. Make sure they’re gluten free if needed. Bob’s Red Mill is my favorite brand!
  • Milk - I use almond milk, but any type of dairy or non-dairy milk will work. 
  • Espresso - You’ll need at least one shot of brewed espresso. Feel free to use decaf if preferred. 
  • Greek yogurt - Make sure to use plain flavored. This adds extra protein and helps soften the oats, creating a creamy consistency. 
  • Chia seeds - These become gelatinous, adding volume and creating an almost pudding-like texture. They’re also a good source of fiber and healthy fats. 
  • Maple syrup - A natural sweetener to balance some of the bitterness of the espresso. Honey will also work. 
  • Cocoa powder - Adds a bold chocolate flavor. Make sure your cocoa powder is unsweetened, or swap it out with cacao powder instead. 
  • Vanilla extract - Enhances the rest of the ingredients and adds a delicious vanilla taste. Whenever possible, use pure vanilla extract instead of imitation varieties. 
  • Sea salt - A little goes a long way to enhance the rest of the ingredients. You’ll notice if it’s not there! 
  • Chocolate chips - This forms a sweet chocolate shell. Use milk chocolate, dark chocolate, or even white chocolate chips. If needed, use dairy free varieties like Enjoy Life brand. 

How to Make Overnight Coffee Oats

Step 1: Combine. Add the rolled oats, milk, espresso, Greek yogurt, chia seeds, maple syrup, cocoa powder, vanilla extract, and sea salt to a jar. Mix until well combined. 

Step 2: Melt the chocolate. Heat the chocolate in 8-second increments in the microwave until thin and melted. 

Step 3: Top the oats. Pour the chocolate on top of the oats, covering the top. Secure the lid on the jar, and transfer the mixture to the fridge. 

Step 4: Serve. Break the chocolate shell with a spoon the next day, and dig in!

What are the best oats for overnight oats? 

Old fashioned oats are best for overnight oats recipes. Quick oats and steel cut oats won’t work. Rolled oats are flat and thin and absorb the liquid well, becoming soft and easier to digest.

How long do coffee overnight oats last? 

Stored in an airtight container in the fridge, coffee overnight oats will stay fresh for up to one week. 

Can I serve this coffee overnight oats recipe warm? 

Yes, transfer the oats to a microwave-safe bowl, and heat for a minute or two or until warmed through, adding a splash of milk as needed. Also, keep in mind that the chocolate will melt once warm!

Ingredients
 
 

  • cup rolled oats
  • ½ cup milk of choice - I use almond milk
  • ¼ cup espresso - about 1 shot
  • ¼ cup greek yogurt
  • 1 tablespoon chia seeds
  • ½ tablespoon maple syrup
  • 1 teaspoon cocoa powder
  • ½ teaspoon vanilla extract
  • teaspoon sea salt

To assemble

  • 2 tablespoon chocolate chips; melted - optional

Instructions

  • In a jar, add the rolled oats, milk, espresso, greek yogurt, chia seeds, maple syrup, cocoa powder, vanilla extract, and sea salt. Mix with a spoon until well combined.
    ⅔ cup rolled oats, ½ cup milk of choice, ¼ cup espresso, ¼ cup greek yogurt, 1 tablespoon chia seeds, ½ tablespoon maple syrup, 1 teaspoon cocoa powder, ½ teaspoon vanilla extract, ⅛ teaspoon sea salt
  • Melt the chocolate in the microwave in 8 second increments until thin and melted.
    2 tablespoon chocolate chips; melted
  • Pour the chocolate on top of the oats until it covers the top. Secure the lid on the jar and transfer to the fridge overnight.
  • The next day, enjoy with a spoon to break the chocolate shell and dig in!

Storage : These overnight oats will keep for up to a week in the fridge when stored with an airtight lid.
