For the watermelon slush

  • 5 cups frozen watermelon about ½ medium watermelon, cubed
  • ¼ cup lime juice approx. 4 limes
  • 1 tablespoon honey sub. maple syrup or agave

For the yogurt

  • 1 cup greek yogurt plain and unsweetened
  • 1 tablespoon honey sub. maple syrup or agave
  • ½ teaspoon vanilla
  • teaspoon mint extract
  • teaspoon sea salt

To assemble

  • fresh mint optional, to garnish

Instructions

  • Slice and cut the watermelon into chunks and place in an airtight container. Freeze for at least 12 hours until frozen.
    5 cups frozen watermelon
  • Once frozen, blend the frozen watermelon in a high speed blender with the lime juice and honey.
    ¼ cup lime juice, 1 tablespoon honey
  • Prepare the yogurt by mixing together the greek yogurt, honey, vanilla, mint extract, and sea salt until well comined.

  • Serve the watermelon slush in a jar with a dollop of mint yogurt and fresh mint leave on top to garnish, if desired.
