Slice and cut the watermelon into chunks and place in an airtight container. Freeze for at least 12 hours until frozen.

Once frozen, blend the frozen watermelon in a high speed blender with the lime juice and honey.

Prepare the yogurt by mixing together the greek yogurt, honey, vanilla, mint extract, and sea salt until well comined.

Serve the watermelon slush in a jar with a dollop of mint yogurt and fresh mint leave on top to garnish, if desired.
