Weeknight Lasagna Roll Ups
I’ve made my share of classic lasagna over the years, but these lasagna roll ups have officially become my weeknight secret weapon. They give you all the cozy layers of pasta, meaty marinara sauce, and creamy ricotta filling but in a fun, easy-to-serve format. They're meal prep friendly too, store a batch in the freezer and they're ready to bake when you're short on time.

Not your average lasagna
If you’ve been around here for a minute, you already know I’m a comfort-food girly through and through - lasagna soup, butter chicken, and healthier hamburger helper…the list goes on. So it tracks that I’m obsessed with these lasagna roll ups. They’re easier to make than a full classic lasagna and they freeze like a dream, which instantly qualifies them as a life hack in my book.

On a random Tuesday, I’ll whip up a batch, sometimes a double because future-me deserves nice things, and freeze one tray for later. Then it’s thaw, reheat, and eat. No chopping, no layering, no “why is every dish in my kitchen dirty?” meltdown… just cozy lasagna rolls waiting whenever you need them.

Lasagna Roll Up Ingredients
Ingredient-wise, nothing fancy here! I usually start with ground turkey, but if you’ve got ground beef on hand, use it. Then I stir in store-bought marinara (no shame; it tastes great and saves time), spread on a layer of creamy ricotta, and roll everything up in gluten-free lasagna noodles. Top it all with plenty of mozzarella and let the oven work its magic.

Storing Options
Refrigerator - Allow the lasagna roll ups to cool completely, then transfer them to an airtight container. Store in the fridge for up to 5 days. To reheat, place on a microwave-safe plate and warm in 30-second intervals until heated through.
Freezer (Cooked) - Once cooled, place the cooked lasagna roll ups in an airtight container and freeze for up to 3 months. When ready to enjoy, thaw overnight in the refrigerator, then reheat in a 350°F oven for 10–15 minutes, or until warmed through.
Freezer (Uncooked) - Assemble the roll ups as directed but do not bake. Arrange them in an airtight container or casserole dish, pour the sauce over top, and add the cheese. Freeze for up to 3 months. When ready to cook, thaw overnight in the fridge and bake according to the recipe instructions.

Easy Turkey Lasagna Roll Ups
Ingredients
- 3 tablespoon olive oil
- ½ onion - diced - about 1 cup
- 2 garlic cloves - minced
- 1 lb ground turkey
- 2 cups Rao’s Marinara - or marinara of choice
- Lasagna noodles - 8 noodles
- 16 oz ricotta cheese - part-skim or whole milk
- 1 cup mozzarella cheese
- Parmesan - optional
Instructions
- Preheat the oven to 350°F. Heat the olive oil in a large skillet over medium heat, add the diced onions, and cook until soft, then stir in the minced garlic and cook for another minute.3 tablespoon olive oil, ½ onion - diced, 2 garlic cloves - minced
- Add the ground turkey to the skillet and cook until browned, about 3–5 minutes, then pour in the marinara sauce, bring it to a simmer, and remove the skillet from the heat.1 lb ground turkey, 2 cups Rao’s Marinara - or marinara of choice
- Spread about one-third of the sauce over the bottom of a 9×13 baking dish so it lightly coats the surface.
- Meanwhile, boil the lasagna noodles until al dente, drain, and rinse with cold water.Lasagna noodles - 8 noodles
- Lay the lasagna noodle on a baking sheet and spread a thin layer of ricotta over each noodle, leaving a small border, then spoon a little meat sauce on top. Roll each noodle tightly and place the rolls seam-side down in the baking dish.16 oz ricotta cheese - part-skim or whole milk
- Pour the remaining sauce over the roll-ups, top with mozzarella and parmesan, cover the dish with foil, and bake for 30–35 minutes.1 cup mozzarella cheese, Parmesan - optional
- For a crispy top, remove the foil and broil for 2–3 minutes before serving warm.
