Why You’ll Love This Creamy Lasagna Soup

My gluten free turkey lasagna is one of my favorite meals. However, I don’t always have the time or patience to layer all the ingredients and wait for them to bake. So, I make this turkey lasagna soup instead! 

It has all the same basic ingredients but requires minimal prep time and a quick cooking time. Plus, I only need one pot, keeping cleanup quick and easy. Served warm with lots of cheese on top, it’s one meal everyone in my home always loves. 

In fact, it's so good that you may never go back to baked lasagna recipes again!

Easy Lasagna Soup Ingredients and Notes

  • Oil - I prefer the strong flavor of olive oil, but avocado oil will also work. 
  • Aromatics - Onion and garlic infuse the meat sauce with a sweet, savory, pungent taste. 
  • Ground turkey - You can use either white or dark-meat turkey. I recommend using a fat content of above 90% to prevent the soup from becoming greasy. You can also use lean ground beef or ground chicken if preferred. 
  • Marinara -  To keep things very simple, I use a store-bought marina sauce. Of course, you are welcome to make your own homemade marina if you prefer.
  • Chicken broth - Feel free to use any broth you have on hand. I recommend low-sodium varieties. 
  • Pasta - Bow tie pasta takes the place of lasagna noodles. Feel free to use gluten-free noodles if needed.
  • Optional toppings - Ricotta cheese, parmesan cheese, and fresh parsley add a finishing touch, replicating the cheesy flavor you look for in classic lasagna recipes. 

How to Make This One-Pot Lasagna Soup Recipe

Step 1: Sauté. Heat the olive oil in a large pot over medium heat. Then, add the onion and garlic, and sauté until fragrant. Next, add the turkey, and brown, breaking it up into small pieces as it cooks.

Step 2: Simmer. Add the marinara sauce, and mix it into the meat mixture. Next, add the chicken broth and pasta noodles, and bring the mixture to a simmer. I recommend using medium-high heat! Cook until the noodles are soft. 

Step 3: Serve. Portion the soup into bowls, and top it with ricotta cheese, parmesan, and a pinch of parsley on top. Enjoy warm!

Serving Suggestions 

I love to serve this creamy lasagna soup recipe with a side of garlic bread, almond flour cornbread, or goat cheese muffins! Or, if you want to add more nutrients, it’s great with veggie-filled sides like crispy roasted Brussels sprouts, pumpkin salad, or a Brussel sprout Caesar salad

How to Store and Reheat

Store leftover lasagna soup in an airtight container in the refrigerator for 3-4 days. When you’re ready to serve, reheat the soup in the microwave or in a pot over medium heat on the stop. 

The noodles tend to absorb the liquid as they sit. So, you’ll likely need to add an extra splash of broth to freshen the soup back up!

Can I Freeze Lasagna Soup? 

Yes, you can freeze this recipe without the cheese toppings. If possible, I also recommend omitting the pasta until you’re ready to eat. 

To freeze, allow the soup to cool completely. Then, transfer it to a freezer-safe container, and freeze for 2-3 months. 

Thaw it in the fridge overnight. Then, reheat in the microwave or on the stove when you’re ready to eat.

  • 2 tablespoon olive oil
  • ½ white onion - diced
  • 2 garlic cloves - minced
  • 1 lbs ground turkey - you can also use beef or chicken
  • 24 oz marinara - I used Rao’s
  • 6 cups chicken broth - low sodium
  • 8 oz bow tie pasta - use gluten free if needed

Toppings, optional

  • Ricotta cheese
  • Parmesan - grated
  • Parsley - finely chopped

Instructions

  • In a large pot, heat the olive oil over medium heat. Saute the onion and garlic until fragrant. Add the ground turkey and break up into small pieces while it browns in the pot.
    2 tablespoon olive oil, ½ white onion, 2 garlic cloves, 1 lbs ground turkey
  • Once the turkey is browned, add the marinara sauce and mix into the meat.

  • Add the chicken broth and pasta noodles to the mixture and bring it to a simmer (I recommend medium high heat). Allow the noodles to cook for 8 - 10 minutes until soft.
    6 cups chicken broth, 8 oz bow tie pasta
  • Serve the soup in bowls with a dollop of ricotta cheese, sprinkle of parmesan cheese, and a pinch of parsley on top.

Notes
