Noodles in the Crockpot?

Yes, it can be done. You just have to do it in the right order. Crock-tober is in full swing, and after my teriyaki chicken and noodles got so much love, I had to try one of my favorites, peanut noodles, in the crockpot.

A woman with long red hair, wearing a brown sweater and jeans, smiles while standing in a modern kitchen beside a counter with fresh lettuce and hibachi steak bowls. Marble backsplash and gold kitchen accents are visible in the background.

The chicken cooks low and slow in a creamy peanut sauce. Then you toss in whatever vegetables you want. I went with red bell pepper and edamame. The soba noodles go in last, right before serving. I cook them separately because they’d turn gummy if they cook in the crockpot. Enjoy!

A person sits cross-legged in a meditation pose with their hands resting on their knees, peacefully imagining delicious hibachi steak bowls. The simple black outline contrasts against a white background.

If your week needs more set-it-and-go dinners, my crockpot honey garlic chicken and rice is another one my kids clean their plates on. If you’d rather make noodles on the stove in 20 minutes, try my stovetop lo mein or almond butter noodles.

Ingredients & Notes

  • Peanut butter - Use a natural peanut butter. Either creamy or crunchy work.
  • Chicken broth - A ¼ cup of broth keeps the sauce loose enough to toss with the noodles at the end.
  • Chicken breast - Cut it into chunks so every piece sits in the sauce. Thighs work too.
  • Soba noodles - I used Lotus Foods. Cook them separately until al dente since they keep softening once they hit the warm sauce.
  • Coconut aminos - Both soy sauce and tamari work too.
  • Edamame and red bell pepper - They go in at the end so they stay bright and keep a little bite.

Ansley's Tips

  • LOW for 3 hours is the sweet spot. If you’re running behind, use HIGH for 1 to 2 hours.
  • Turn it to HIGH for the veggies. This softens the bell pepper and edamame.
  • Stir before adding the veggies. The peanut sauce thickens as it cooks, and a good stir loosens it back up.
  • Add the noodles last. Toss them in right before serving. If they sit in the crockpot, they’ll go soft.
