Vegan Gluten Free Apple Fritters

Get into the fall spirit with a fresh batch of these homemade vegan baked apple fritters! Best of all, you can enjoy these super fluffy baked doughnuts without the mess of a deep fryer. They're still pillowy soft and drizzled with a maple coconut butter glaze.

Vegan Baked Apple Fritters

You heard it here first folks - you can make vegan apple fritters in the oven! No greasy hot oil involved. And they're just as pillow-y soft so we don't have to sacrifice that beloved doughnut texture.

The glaze may be my favorite part though. We combine my favorite fall flavor, maple, with warm melted coconut butter and drizzle it on top of these hot doughnuts. Each bite is like a healthy dose of fall!

Vegan Apple Fritter Ingredients

To make these baked apple fritters, you just need a few gluten-free pantry staples:

  • Native Forest Coconut Milk + Apple cider vinegar - also known as 'vegan buttermilk'. Make sure you use full fat coconut milk. The cream at the top of the can is what provides the moistness to these doughnuts. When it reacts with the apple cider vinegar, it helps to give them some rise, like a classic fritter!
  • Cassava flour + Let's Do Organic Arrowroot Starch - this combination ensures a super fluffy texture.
  • Baking powder - this is what makes sure the doughnuts rise. Make sure you use baking powder and not soda.
  • Coconut sugar - to sweetened the fritters. The coconut sugar provides and subtle caramel flavor to these baked doughnuts.
  • Apples - you can't have apple fritters without apples right? Make sure to use ripe apples and dice them into small chunks.
  • Coconut oil - used to sauté the apples.
  • Vanilla - the vanilla gives the apples a slightly sweet flavor giving them the perfect combination of tart yet sweet.
  • Cinnamon + Nut meg + Cloves - these spices elevate the fritters so they really taste like fall!

How to Make Vegan Apple Fritters

Okay guys, these fritters are way too easy to make. Like dangerously easy. Here's how it goes down:

  1. First, sauté the apples with the coconut oil, coconut sugar, and spices. Cook until the apples are soft then set aside and let the mixture cool while you prepare the dough
  2. Next, make the dough by first mixing the coconut milk and apple cider vinegar then set it aside. In a large bowl, mix the cassava flour, arrowroot starch, baking powder, and coconut sugar. Slowly add the coconut milk mixture and continue to mix until a thick dough forms.
  3. Then, add the apples, including the liquid, to the dough and mix to incorporate. With a large cookie scoop, scoop the dough onto a baking sheet lined with parchment paper and bake.
  4. While the fritters are baking, prepare the glaze. Melt the coconut butter and stir in a little maple syrup. If the consistency it too thick, add a tablespoon nut milk. Drizzle on top of fritters while they're warm and enjoy!

Baked Apple Fritter Recipe Tips

  • Make sure to cook the apples until they’re soft and no longer crunchy. Soft sweet apples are what make this fritter so good!
  • Don’t over mix the dough so prevent hard dry fritters. Only mix until the flour is just incorporated.
  • Drizzle the glaze over the fritters while they’re warm.

How to store gluten free apple fritters

These fritters are best enjoyed fresh but if you have some leftover, allow them to cool down completely before storing them in an airtight container. Store out on the counter for up to 2 days or in the fridge for up to 3 days. When ready to enjoy, heat the fritter up in the microwave in 10 second increments until warm.

Ingredients
  

For the apples

  • 3 cups diced apples - approx. 3 medium apples
  • 3 tablespoon coconut oil
  • 3 tablespoon coconut sugar
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon cloves

For the dough

For the glaze

  • cup coconut butter - melted (sub. ½ cup organic powdered sugar if desired)
  • 2 tablespoon maple syrup
  • 1 tablespoon nut milk - if needed to thin out the glaze

Instructions

  • Preheat the oven to 400F. Saute the apples in a skillet over medium-low heat with all the apple ingredients until soft. Remove from heat and let cool while you prepare the dough.
    3 cups diced apples, 3 tablespoon coconut oil, 3 tablespoon coconut sugar, 1 teaspoon vanilla, 1 teaspoon cinnamon, ½ teaspoon nutmeg, ½ teaspoon cloves
  • In a small bowl, whisk the Native Forest Organic Unsweetened Simple Coconut Milk and apple cider vinegar together and set aside
    1 cup Native Forest Organic Unsweetened Simple Coconut Milk, 1 tablespoon apple cider vinegar
  • In a mixing bowl or the bowl of a stand mixer, mix the cassava flour, Let's Do Organic Arrowroot Starch, baking powder, and coconut sugar. Slowly add the coconut milk mixture and continue to mix until a thick dough forms. Add the apple mixture (including any liquid) and mix a few times to incorporate.
    1 cup cassava flour, ¼ cup Let's Do Organic Arrowroot Starch, 1 tablespoon baking powder, 2 tablespoon coconut sugar
  • With a large cookie scoop, scoop the dough onto a baking sheet lined with parchment paper. Bake for 12 - 14 minutes until the tops of the fritters turn golden brown.
  • While the fritters are baking, prepare the icing by mixing the melted coconut butter and maple syrup in a small bowl. Add 1 tablespoon nut milk if needed to thin out the mixture. Drizzle over fritters while warm and enjoy!
    ⅓ cup coconut butter, 2 tablespoon maple syrup, 1 tablespoon nut milk
