What To Make When Your Garden’s Zucchini Stage a Takeover

Okay, so picture this: it’s 4:00 p.m., you’re feeling snacky, and your garden is staring at you with a pile of zucchini that need to be picked. Enter these mini pizza bites— melty and wildly satisfying. I made them once just to "test the recipe" and my husband and I ended up eating the entire batch straight from the pan. No regrets. They're like pizza’s healthy-ish little cousin who still knows how to party.

There’s just something magical about turning a classic “junk food” fave into a feel-good, veggie-packed masterpiece. I mean, if pizza can get a zucchini makeover this delicious, who's to say Alfredo can't be made from cauliflower or nacho cheese made with cashews?

How to Make Zucchini Pizza Bites

Step 1 : Slice the zucchini. I found the easiest way to do this is with the largest setting on a mandolin. If you're good with a knife you can also slice the zucchini into ¼-inch rounds.

Step 2 : Dip in pizza sauce. Cover the entire zucchini round in a light coating. This is like the "glue" that the parmesan will stick too.

Step 3 : Lightly drag the zucchini round through parmesan. Don't over do it! Less is more here.

Step 4 : Create stacks. I prefer short stacks of 3-4 zucchini rounds. I don't recommend stacking more than 7 because it can tip over in the oven. Slip a pepperoni in between the rounds to amp up the protein if you want!

Serve em' up!

These pizza bites were made for parties—bite-sized, crispy, and totally irresistible. Let them cool for a few minutes so they get that perfect golden edge, then pile them onto a platter with warm marinara for dipping action. Heads up: the melty cheese can get a little messy (in the best way), so keep napkins handy and let the snacking commence!

Are these zucchini bites gluten free?

Yes, this recipe is naturally gluten free. There are no breadcrumbs in the coating which are usually included in breaded zucchini like this. As always, make sure to check the product labels on the pizza sauce and parmesan to ensure they don't include gluten.

Can you use marinara sauce instead of pizza sauce?

Yes, the sauce might be a little thinner depending on the brand but either can be used in this recipe.

Easy Zucchini Pizza Bites

Ingredients
  

  • 2 zucchinis
  • 1 cup pizza sauce
  • 1 cup parmesan - grated
  • Pepperoni - optional, I used turkey pepperoni

Instructions

  • Slice the zucchini. Preheat oven to 400 F. Slice the zucchini into ½ inch thick pieces. I like to use the largest setting on a mandolin but you can also use a sharp knife.
  • Assemble. Dip each zucchini round in the pizza sauce to lightly coat it then dredge in parmesan. Place the coated zucchini on a baking sheet with parchment paper or aluminum foil. Repeat with another 1 - 2 zucchini rounds and stack on top of each other. You can add a pepperoni slice in between the layers if desired. I like to have some with pepperoni and some without if serving for a crowd. Repeat this step with all of the remaining zucchini rounds until you have stacks. Be careful not to stack too high or they may tip over as the cheese melts. Bake in the oven for 20 - 30 minutes until crispy.
  • Serve. Plate the zucchini bites while warm and serve with additional pizza sauce, if desired, and enjoy!
