Step 1 : bake the sweet potato

With a fork, poke some holes in the skin of the sweet potato. Bake it in the oven until soft.

Step 2 : mix the wet ingredients

In a large mixing bowl, beat the eggs with the sweet potato, coconut sugar, and vanilla until thick and creamy.

Step 3 : add the almond butter

Add the almond butter and coconut oil and continue to beat until well combined.

Step 4 : add the dry ingredients

Next, add the coconut flour and cacao powder to the bowl and fold to combine.

Step 5 : fold in chocolate chips

Finally, fold in the chocolate chips. Be careful not to over-mix.

Step 6 : fold in chocolate chips

Pour the batter into an 8 x 8 inch baking dish that is lined with parchment paper or greased with oil.

Let cool, dust with cacao powder, and slice into squares
