BBQ Chicken Bowls

Dinner just got a whole lot more fun. These BBQ Chicken Bowls are smoky, saucy, and topped with a fresh pineapple salsa that adds the perfect sweet-tangy kick. They’re quick to make, easy to customize, and taste like sunshine in every bite. No grilling required!

Ingredients

For the pineapple salsa

  • 2 cups pineapple chopped into small pieces
  • 1 bell pepper diced
  • ½ red onion diced
  • 1 jalapeno finally diced (optional)
  • 3 tablespoon Cilantro finely chopped
  • 2 Limes juiced
  • Pinch of sea salt to taste

To assemble

Instructions

  • Prepare the pineapple salsa. In a mixing bowl, add all of the salsa ingredients. toss well to combine. set aside.
    2 cups pineapple, 1 bell pepper, ½ red onion, 1 jalapeno, 3 tablespoon Cilantro, 2 Limes, Pinch of sea salt
  • Make the bbq chicken. In a separate Bowl add the pulled chicken and 1 cup of the barbecue sauce. Toss well to coat.
    1.5 lbs cooked chicken, 8.5 oz BBQ sauce
  • Assemble. To individual bowls, add a scoop of cooked rice with a squeeze of lime juice followed by a serving of bbq chicken and pineapple salsa. Drizzle extra barbecue sauce over top if desired and enjoy!
    2 cups cooked rice

Notes

Storage: Store all the components in separate airtight containers. The chicken and rice will keep fresh for 3-5 days, and the salsa will last for 2-3 days. To serve, reheat the rice and chicken, and assemble the bowls.
