Ingredients Notes

Pineapple Salsa

  • Pineapple - I use fresh pineapple, but canned will also work. Just be sure to drain it well first! 
  • Veggies - Bell pepper, red onion, and jalapeño add bulk, nutrients, satisfying crunch, and the perfect kick of heat. 
  • Cilantro - Adds a bright, refreshing taste. Omit it if you aren’t a fan. 
  • Lime Juice - Freshly squeezed is best! In a pinch, store-bought lime juice will work, but it may not be as potent. So, you will need to add a little more.
  • Sea Salt - Don’t skip this. Your salsa will fall flat without it! 

Bowls

  • Chicken - Use cooked pulled chicken. Or, use a store-bought rotisserie chicken for an even easier option. 
  • BBQ Sauce - Use homemade sugar-free barbecue sauce. Or, keep things easy with your favorite store-bought option. The Primal Kitchen brand is my fave! 
  • Cooked Rice - I prefer brown rice as the base of the bowls, but white rice is also great. Or, use quinoa or cauliflower rice instead. 

How to Make BBQ Chicken Bowls with Pineapple Salsa

Ansley's Top Tips

  • Use day-old rice (reduce prep time and prevent waste!). Slightly dry rice won’t get mushy or clumpy under the weight of the barbecue sauce. 
  • Want more nutrients? Add veggies! Include sautéed onions, mushrooms, bell pepper, zucchini, or broccoli – whatever you have on hand! Top them with sauce, and picky eaters won’t even notice them. 
  • Add toppings. Feeling extra? Include pickled red onions, avocado, or roasted corn.

Ingredients
 
 

For the pineapple salsa

  • 2 cups pineapple - chopped into small pieces
  • 1 bell pepper - diced
  • ½ red onion - diced
  • 1 jalapeno - finally diced (optional)
  • 3 tablespoon Cilantro - finely chopped
  • 2 Limes - juiced
  • Pinch of sea salt - to taste

To assemble

  • 1.5 lbs cooked chicken - pulled
  • 8.5 oz BBQ sauce - I like the Primal kitchen brand but you can also make your own
  • 2 cups cooked rice - white or brown rice works
  • 1 Lime - juice

Instructions

  • Prepare the pineapple salsa. In a mixing bowl, add all of the salsa ingredients. toss well to combine. set aside.
    2 cups pineapple, 1 bell pepper, ½ red onion, 1 jalapeno, 3 tablespoon Cilantro, 2 Limes, Pinch of sea salt
  • Make the bbq chicken. In a separate Bowl add the pulled chicken and 1 cup of the barbecue sauce. Toss well to coat.
    1.5 lbs cooked chicken, 8.5 oz BBQ sauce
  • Assemble. To individual bowls, add a scoop of cooked rice with a squeeze of lime juice followed by a serving of bbq chicken and pineapple salsa. Drizzle extra barbecue sauce over top if desired and enjoy!
    2 cups cooked rice

Notes

Storage: Store all the components in separate airtight containers. The chicken and rice will keep fresh for 3-5 days, and the salsa will last for 2-3 days. To serve, reheat the rice and chicken, and assemble the bowls.
