Super-Simple Banana Bread Baked Oats with Maple Syrup

This banana baked oatmeal is my answer to those mornings when I want banana bread but need something fast. It’s rich, warm-spiced, and sweetened naturally with ripe bananas and maple syrup. Mixed up in one bowl and baked in a simple rectangular pan, it’s super-simple, filling, and totally breakfast-worthy. Especially with a spoonful of yogurt on top 😉.

Banana Bread Meets Baked Oats 🍌

If you love banana chocolate chip bread as much as I do, this recipe is for you. These banana bread baked oats taste like a warm, cozy slice of banana bread fresh out of the oven, but are a lot more filling. 

Made with simple, wholesome ingredients like ripe bananas, rolled oats, and a touch of maple syrup, this recipe is equal parts indulgent and nourishing. Plus, you can prep it in advance and reheat throughout the week. Ideal for busy mornings, it’s a fun way to start your day and has been a game-changer for me!

If you always find overripe bananas on your counter (same here), don’t stop with these baked oats. Banana Bread Baked Oats Ingredients

  • Bananas - Slightly brown and soft are best. Try to avoid using green/light yellow bananas as they will be a little stiff and won't provide the sweet flavor or moisture needed.
  • Eggs - These act as a binder, helping the oat bake hold its shape. I haven’t tested this recipe with egg substitutes and can’t guarantee the results if you do. 
  • Almond Butter - This thickens the oat mixture and adds a subtle nutty flavor with a boost of healthy fats. I recommend using smooth almond butter for a smooth batter. 
  • Almond Milk - This brings everything together and softens the oats to the perfect consistency. I recommend unsweetened almond milk, but any milk you love will work just fine.
  • Maple Syrup - Sweetens the oats. Substitute honey, if preferred. 
  • Rolled Oats - The star of the show! Be sure to grab certified gluten-free oats if needed—I’m team  Bob’s Red Mill all the way.
  • Spices - Ground cinnamon, nutmeg, cloves, and sea salt add warmth and depth, replicating the flavor of the best banana bread. 
  • Chocolate Chips -  Dark chocolate is my go-to, but milk chocolate, semi-sweet, and even white chocolate taste great. I prefer to use mini chocolate chips over full-sized varieties so you get little pockets of chocolatey goodness in every bite. This Enjoy Life brand is my go-to, but any chocolate chips or chunks will work in this recipe. Or, if you aren’t a fan of chocolate, fold in chopped walnuts or pecans instead!

Step 1: Mash the bananas in a large bowl, leaving just a few small clumps.

Step 2: Whisk the remaining ingredients in with the banana.

Step 4: Bake until the top of the oats are golden brown. 

How to Store

My favorite thing about these banana bread oatmeal bars? They’re great for meal prep! Once cool, transfer leftovers to an airtight container, and store them in the fridge for up to 1 week. Reheat in the microwave to serve, or enjoy them cold. 

And don’t forget to add toppings like extra almond butter, fresh fruit, maple syrup, or even whipped cream!

  • 3 bananas
  • 2 eggs
  • 1 cup almond milk - or any type of milk
  • cup almond butter
  • cup maple syrup
  • 1 tablespoon vanilla
  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon cloves
  • ¼ teaspoon sea salt
  • ½ cup chocolate chips

Instructions

  • Mash the bananas. Preheat oven to 350 F. In a large bowl, mash the bananas, leaving a few small clumps.

  • Prepare the batter. Add the remaining ingredients to the bowl and whisk to combine.
    2 eggs, 1 cup almond milk, ⅓ cup almond butter, ⅓ cup maple syrup, 1 tablespoon vanilla, 2 cups rolled oats, 1 teaspoon baking powder, 1 teaspoon cinnamon, ¼ teaspoon nutmeg, ¼ teaspoon cloves, ¼ teaspoon sea salt, ½ cup chocolate chips
  • Bake. Spray a 9 x 13 inch baking dish with cooking spray then pour in the batter. I like to sprinkle a few chocolate chips or banana slices on top. Then bake in the preheated oven for 35 - 40 minutes until the top of the baked oats are golden brown.

Notes

Storing : Allow the baked oats to cool, then store the slices in an airtight container. They will keep for up to a week in the fridge.
