Everyone needs a go-to fall bake, and this recipe for pumpkin blondies is mine! I bring these to every Friendsgiving, potluck, neighborly get-together...someone always asks for the recipe before the night’s over!

  • Preheat oven to 350 F. In a large bowl, whisk together the eggs, maple syrup, almond butter, pumpkin puree, and vanilla extract.
    2 eggs, ½ cup maple syrup, ½ cup almond butter, ⅓ cup pumpkin puree, ½ tablespoon vanilla extract
  • Fold the almond flour, pumpkin spice, baking soda, and sea salt into the batter until combined. Fold in the chocolate chips to distribute.
    2 cups almond flour, 1 teaspoon pumpkin spice, ½ teaspoon baking soda, ¼ teaspoon sea salt, ½ cup chocolate chips
  • Pour the batter into an 8 x 8 pan lined with parchment paper. Use a spatula to spread the batter into an even layer. Bake in the oven for 20 - 25 minutes until the sides begin to pull away from the sides of the pan and the top is golden brown.
  • Allow the blondies to cool before slicing them into squares and enjoy!
