Thick & Chewy Chocolate Chip Pumpkin Blondies
What do you get when you combine a chocolate chip cookie and a pumpkin bar? You get these thick and chewy pumpkin blondies - soft, fudgy, and filled with melty chocolate chips in every bite. This pumpkin blondies recipe is made with almond flour, almond butter, pumpkin purée, maple syrup, and plenty of warm spices for that incredible spiced pumpkin flavor. They’re fudgy like a brownie but slightly cakey. Everything I want in a fall bake!

Everyone needs a go-to fall bake, and this recipe for pumpkin blondies is mine! I bring these to every Friendsgiving, potluck, neighborly get-together...someone always asks for the recipe before the night’s over!

My daughter helped me make them this year (mostly by sneaking chocolate chips), and we had the best time mixing the batter together. Since these are easy-to-make pumpkin blondies, they're hard to mess up. Just one bowl, one pan, and one amazing smell wafting through the kitchen.

Pumpkin Spice Blondie Ingredients
These pumpkin blondies come together with simple, wholesome ingredients you probably already have in your pantry. A base of almond flour and almond butter gives them that naturally chewy, rich texture, while pumpkin purée, maple syrup, and pumpkin spice blend together for cozy fall flavor in every bite. Baking powder adds just enough lift to keep them fudgy like a brownie but slightly cakey, and a handful (or two) of chocolate chips makes each bite melt-in-your-mouth irresistible.

Chocolate Chip Pumpkin Blondies
Ingredients
- 2 eggs
- ½ cup maple syrup
- ½ cup almond butter - creamy
- ⅓ cup pumpkin puree
- ½ tablespoon vanilla extract
- 2 cups almond flour
- 1 teaspoon pumpkin spice
- ½ teaspoon baking soda
- ¼ teaspoon sea salt
- ½ cup chocolate chips - I used mini chocolate chips
Instructions
- Preheat oven to 350 F. In a large bowl, whisk together the eggs, maple syrup, almond butter, pumpkin puree, and vanilla extract.2 eggs, ½ cup maple syrup, ½ cup almond butter, ⅓ cup pumpkin puree, ½ tablespoon vanilla extract
- Fold the almond flour, pumpkin spice, baking soda, and sea salt into the batter until combined. Fold in the chocolate chips to distribute.2 cups almond flour, 1 teaspoon pumpkin spice, ½ teaspoon baking soda, ¼ teaspoon sea salt, ½ cup chocolate chips
- Pour the batter into an 8 x 8 pan lined with parchment paper. Use a spatula to spread the batter into an even layer. Bake in the oven for 20 - 25 minutes until the sides begin to pull away from the sides of the pan and the top is golden brown.
- Allow the blondies to cool before slicing them into squares and enjoy!
