Crockpot steak and potatoes is the dinner I want on a cold weeknight. Tender beef, baby potatoes, and mushrooms slow cook in a red wine and beef broth gravy until everything’s fork-tender. Sear the beef, dump everything in, and walk away all afternoon. There’s no stick of butter and no flour, so it’s naturally gluten-free and dairy-free. It tastes like a warm hug in a bowl!

My kind of hearty dinner

I’ve seen the viral crockpot steak bites and potatoes, and they look delicious, but I didn’t want a whole stick of butter melting into my steak. So I made my own version. A splash of red wine deepens the flavor of the seared beef before it goes low and slow in the crockpot.

A woman with long red hair, wearing a brown sweater and jeans, smiles while standing in a modern kitchen beside a counter with fresh lettuce and hibachi steak bowls. Marble backsplash and gold kitchen accents are visible in the background.

The beef melts in your mouth, and the baby potatoes turn into soft, poppable little bites. The broth they cook in is so flavorful you’ll want to spoon up every last drop. It’s exactly what I want to eat on a chilly day at home.

A person sits cross-legged in a meditation pose with their hands resting on their knees, peacefully imagining delicious hibachi steak bowls. The simple black outline contrasts against a white background.

If you’re cooking along with Crock-tober, my shortcut crockpot birria tacos are another beef dinner that cooks while you’re out. For a special-occasion night, my cast iron beef tenderloin is amazing!

Ingredients & Notes

  • Beef stew meat - I pick this up at my local grocery store. It's affordable and holds up well in the crockpot.
  • Baby potatoes - I leave them whole but you can halve them if you prefer.
  • Mushrooms - this is my preferred veggie. They soak up the flavorful broth and are so delicious.
  • Red wine - this is optional. It’s used to deglaze the skillet and reduced by half before it goes in the crockpot.
  • Low-sodium beef broth - this allows you to adjust the sodium level yourself.
  • Arrowroot starch - thickens the sauce. Cornstarch works too.
  • Fresh thyme and rosemary - loosely chopped and added to the crockpot.

Ansley's Tips

  • Sear the beef in two batches. Crowding the pan steams the beef instead of browning it. I had to sear mine in two batches.
  • Use low-sodium broth. Regular broth plus the salt on the beef is too much.
  • Feel free to skip the wine. This just adds more depth of flavor. Skip it entirely if you want.

What to Serve it With

The gravy needs something to soak it up. My savory goat cheese muffins or cornbread both work.
