This marinated feta is creamy, tangy, herby magic — and it could not be easier to make. Just pop it in a jar, let it soak up all the good stuff, and prepare for snack-time greatness.

I seriously can’t stop eating this. Little cubes of feta take a swim in olive oil with garlic, shallots, lemon zest, and thyme, and come out SO flavorful — perfect on toast, in a salad, or straight from the jar (no judgment). It’s my new go-to for easy happy hour hosting or pretending I’m fancy when really, it took five minutes to throw together.
It’s the kind of thing that makes a simple snack feel a little extra special. Plop it on a cheese board, tuck it into a lunch bowl, or gift a jar to your friend who also can't resist a good cheese moment. Trust me — once you start making this, it’ll be on repeat. 🙌

Marinated Feta Cheese Ingredients & Notes

  • Feta – The star of the marinated cheese show! You'll want a block of feta (not the pre-crumbled stuff). If you can find one packed in brine, even better — it’s creamier, tangier, and just all-around more flavorful.
  • Olive Oil – A good, robust olive oil brings major savory depth. If you’re going for something a little more mellow, a light olive oil works great too. Avocado oil or any neutral oil will absolutely work if that's more your style.
  • Lemons – Bright, zesty, and the perfect match for that rich olive oil. The citrus cuts through the creaminess and adds just the right amount of sunshine to every bite.
  • Spices – No fancy spice cabinet required! A pinch of salt and pepper, a dash of Italian seasoning, and a few red pepper flakes for a little heat — simple pantry staples that turn this into a next-level flavor bomb.

Step 1 : Cube the cheese! Make these as small or large as you want, just make sure they fit in your container.

Step 3 : Submerge the feta. Fill your jar/container with the cheese and pour the dressing right over top. Give it a few turns to distribute then let time do the rest.

How to Store

First things first — make sure you’re using a super airtight container. I love a good mason jar because once that lid is on, nothing’s leaking out. Bonus: it looks cute in the fridge, too. Your marinated feta will keep fresh and delicious in the fridge for up to 3 weeks (if it lasts that long!).

Ingredients
 
 

  • 16 oz feta block - cut into cubes
  • ½ cup olive oil
  • 2 lemons - zest & juice
  • ½ shallot - minced
  • 3 cloves garlic - minced
  • ½ tablespoon honey
  • 1 tablespoon thyme - plus extra sprigs for garnish
  • ¼ teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes - adjust to taste
  • ¼ teaspoon sea salt
  • teaspoon black pepper

Instructions

  • Prepare the feta. Pat the block of feta dry with a paper towel (this helps the cheese to absorb the oil and herbs better). Slice it into cubes. You can make these small or large (about 1 inch) just make sure they fit in your container.

  • Make the dressing. In a jar mix together the remaining ingredients until well combined.
    ½ cup olive oil, 2 lemons, ½ shallot, 3 cloves garlic, ½ tablespoon honey, 1 tablespoon thyme, ¼ teaspoon Italian seasoning, ¼ teaspoon red pepper flakes, ¼ teaspoon sea salt, ⅛ teaspoon black pepper
  • Assemble. Place the feta cubes in a jar and pour the dressing over top. Close the lid tight and give the jar a few turns to distribute the liquid. Place the jar in the fridge and allow the feta to marinate for at least 8 hours. The longer the feta marinates the stronger the flavor!

Notes

Storing : The feta will keep for up to 3 weeks when stored in an airtight container in the fridge.
