When the temps start pushing 90, I want something cool, creamy, and just sweet enough to make me forget I’m melting. On one seriously hot afternoon, I started craving that zingy, refreshing magic of Brazilian lemonade—yep, the one that’s actually made with limes 🤔. This coconutty version is my personal spin, and it is summer bliss. The creamy coconut mellows the citrus just right, and once it’s blended with ice? You’ve got a frosty, slushie-like sip that’s pure sunshine. I’ve made it for brunch, for friends, for absolutely no reason—and it never misses.

Ingredients
 
 

  • 1 cup lemon juice - freshly squeezed (approx. 5 lemons)
  • 1 cup coconut milk - full fat, substitute heavy cream if needed
  • cup agave - substitute honey or maple syrup if needed
  • 2 - 3 cups ice

Instructions

  • Add all ingredients to a blender and mix on high until the mixture is running smoothly. You may need to scrape down the sides to ensure everything is blended. Add more ice if needed to reach your desired consistency.
    1 cup lemon juice, 1 cup coconut milk, ⅓ cup agave, 2 - 3 cups ice
  • Pour into glasses and enjoy!
