Crockpot Buffalo Chicken Stuffed Sweet Potatoes
Buffalo chicken doesn’t need a block of cream cheese and a pile of shredded cheddar to be good! These crockpot buffalo chicken stuffed sweet potatoes skip both. Chicken and buffalo sauce slow cook for the afternoon, then a dollop of greek yogurt gets stirred in to mellow the sharp sauce into something creamy. Pile it onto a roasted sweet potato, add ranch and green onions, and that’s dinner!

If you love buffalo chicken but not all the cream cheese and sour cream that usually comes with it, this one’s for you! Even better, the chicken cooks basically hands-off in the crockpot with a bottle of buffalo sauce, so it’s super easy.

My husband (like many) is a huge buffalo chicken fan, and I wanted a way to eat it as an actual dinner, not just a dip. Enter buffalo chicken stuffed sweet potatoes! I used the viral sweet potato roasting method, which gets you caramelized halves that are the perfect vessel for buffalo chicken.

Ingredients & Notes
- Chicken breast - About 4 breasts, straight into the crockpot raw. You’ll pull it apart right in the pot!
- Buffalo sauce - I used Primal Kitchen. This is where all the heat comes from.
- White onion - Diced and cooked with the chicken.
- Greek yogurt - Use plain, 5%. It mellows the sharp buffalo sauce so the chicken is creamy instead of just hot.
- Sweet potatoes - Medium ones are best. Cut them in half lengthwise and roasted cut side down so the flat side caramelizes.
- Ranch and green onions. For the top. My ranch was Primal Kitchen too.

Ansley's Tips
- Dig the well. Before you add the chicken, use a fork to dig a little well in each sweet potato half. It’s the small step that mattered most, because it gives the chicken somewhere to sit.
- Don’t drain the crockpot. All that liquid gets mixed right into the pulled chicken.
- Crockpot off, then mix in yogurt. Switch it to OFF before the greek yogurt goes in.
- Want less heat? Go lighter on the buffalo sauce.
- Roast if you can. You can bake or microwave the sweet potatoes instead, but roasting is what gets you the caramelization.
Serving Suggestions

Crockpot Buffalo Chicken Stuffed Sweet Potatoes
Ingredients
Buffalo chicken
- 3 lbs chicken breast - chicken breast
- 1 white onion - diced
- 8.5 oz buffalo sauce - I used Primal Kitchen
- 1 cup Greek yogurt - plain, 5% fat
Sweet potatoes
- 4 sweet potatoes - halved lengthwise
- Avocado oil spray - or any cooking spray or oil
- 1 teaspoon sea salt
- ½ teaspoon black pepper
For serving
- Ranch dressing - I used Primal Kitchen
- Green onions - sliced
Instructions
- Add the chicken breast and diced onion to the crockpot and pour the buffalo sauce over the top. Cover and cook on LOW for 4 - 6 hours or HIGH for 2 - 3 hours.3 lbs chicken breast, 1 white onion, 8.5 oz buffalo sauce
- About 45 minutes before you’re ready to eat, preheat the oven to 400F. Spray both sides of the sweet potato halves with avocado oil spray and sprinkle with salt and pepper. Place them cut side down on a baking sheet and roast for 30–40 minutes, until the cut side starts to caramelize. Let them rest for a few minutes.4 sweet potatoes, Avocado oil spray, 1 tsp sea salt, ½ tsp black pepper
- Turn the crockpot off. Pull the chicken into smaller pieces right in the crockpot (don’t drain the liquid), add the Greek yogurt, and mix well.1 cup Greek yogurt
- Place a sweet potato half cut side up on a plate and use a fork to dig a small well in the center. Spoon the buffalo chicken on top and finish with ranch dressing and green onions.Ranch dressing, Green onions
