You'll love this Creamy Cucumber Salad Recipe!

I’m a big fan of salads, especially in the summer. I love to prepare my blackened shrimp salad and steak salad for complete meals. However, when it comes to side dish options, this cucumber and yogurt salad is always my go-to.

There’s just something about the combination of crisp veggies and creamy dressing that always hits the spot. Plus, the sweet, savory, herbaceous flavors pair well with pretty much everything.

Leftovers store well, too. So, I like to prepare a large batch to serve for dinner and have it throughout the next couple of days.

This cucumber and feta salad is the perfect way to use up summer veggies, but I’d be lying if I didn’t say I make it all year long. Try it for yourself, and you’ll understand why!

Feta Cucumber Salad ingredients

Cucumber salad ingredients on a pan with labels.
  • Cucumbers - I recommend using English cucumbers or Persian cucumbers because they have a thinner skin and fewer seeds than other varieties.
  • Red onion - These add a nice tang and a satisfying crunch.
  • Greek yogurt - This forms the base of the dressing. I highly recommend using 2% for the best taste and texture.
  • Olive oil - Choose a high-quality oil that you love the taste of. This helps thin the yogurt, creating a smooth, rich dressing.
  • Red wine vinegar - This adds a subtle, zesty tang. Don't use apple cider vinegar or white vinegar, this needs to be red wine vinegar.
  • Honey - A natural sweetener that balances some of the tanginess in the dressing. If preferred, maple syrup will also work.
  • Lemon juice - The acidity cuts through some of the heaviness of the fats and adds a bright taste. Freshly squeezed is best!
  • Seasonings - Garlic powder, sea salt, and black pepper enhance the savory flavor of the dressing.
  • Feta - Adds a creamy texture and salty taste. For the best results, buy a block of feta, and crumble it yourself.

How to make Cucumber Yogurt Salad

This is an overview with step-by-step photos. Full ingredients & instructions are in the recipe card below.

Step 1: Prepare the cucumbers. Wash and dry the cucumbers, and slice them into very thin rounds. Or, use a mandolin to keep the process easy! Then, transfer the cucumbers to a large mixing bowl.

Step 2: Slice the red onion. Use a sharp knife to slice the red onion into strips, and add it to the mixing bowl with the cucumbers.

Step 3: Prepare the dressing. In a separate bowl or jar, add the Greek yogurt, dill, olive oil, red wine vinegar, honey, lemon juice, garlic powder, sea salt, and black pepper. Mix well to combine.

Frequently Asked Questions

Do you peel cucumbers for cucumber salad?

I don’t find it necessary to peel the cucumbers for this salad. However, if you prefer a smoother texture, you can use a vegetable peeler to remove the skin.

How do I prevent my cucumber and feta salad from becoming soggy?

Slice the cucumbers, generously sprinkle them with salt, and let them rest for 20-30 minutes before combining the rest of the ingredients. Then, drain the excess liquid, and continue with the recipe as usual.
