Apple bakes have become one of my new favorite dishes. When I come home with a batch of crisp fresh apples from the store you know a nice apple bake is about to go down.

This gluten-free apple crisp recipe has crisp apples with a crumble on top filled with rolled oats, coconut sugar, and cinnamon. Add a scoop of ice cream on top and it's the most perfect dessert. Best part of all, this apple crisp is made small batch just for two! With the holidays looking a little different year and many families having smaller gatherings, this recipe is a must.

Edward and Sons' Let's Do Organic Coconut Flour

This gluten-free apple crisp for two recipe calls for a couple tablespoons of Let's Do Organic Coconut Flour. Their coconut flour is certified gluten-free and made from fresh coconuts - it adds the perfect texture to the oat crumble! Their coconut flour isn't grainy and dry like other coconut flour but instead provides a great crispiness with the toasted oats!

What you need to make this gluten-free apple crisp recipe

This recipe only requires a few simple gluten-free pantry staples and, of course, fresh crisp apples!

  • Apples - I like to keep the skin on the apples but feel free to peel them if needed
  • Gluten-free rolled oats - make sure your oats are gluten-free. This brand is my favorite
  • Coconut flour - I used Let's Do Organic Coconut Flour
  • Coconut sugar - this provides a little sweetness to the oat crumble
  • Vegan butter - you can also substitute coconut oil if desired
  • Cinnamon - to add a little fall flavor to the dish!

How to make apple crisp for two

Let's get to it! This gluten-free apple crisp recipe is a breeze to make and so perfect for smaller gatherings.

Step 1 : Slice the apples

You want to slice the apples very thin. I like to keep the skins on but you can also peel the apples if desired. A tart apple is preferred for this recipe. I like honey crisp or pink lad. Granny smith would be tasty too!

Line two ramekins with the apples laying on top of each other. Then prepare the oat crumble.

Step 2 : Prepare the oat crumble

For the crumble, add all the ingredients in a mixing bowl and mix until the oats are coated. You should see little clumps start to form.

Step 3 : Sprinkle on top of the apples and bake!

Sprinkle on top of the apple slices and bake in the oven until golden brown!

Step 4 : Top with ice cream

You can't have an apple bake without a scoop of ice cream! My vanilla paleo ice cream is perfect on top of the toasted oat crumble.

Ingredients
 
 

  • 1 apple - honey crisp, pink lady, or granny smith are best
  • ½ cup rolled oats
  • 2 tablespoon Let's Do Organic Coconut Flour
  • 2 tablespoon coconut sugar
  • 3 tablespoon vegan butter - melted (sub. coconut oil)
  • ½ teaspoon cinnamon
  • Vanilla ice cream - to top (optional)

Instructions

  • Preheat oven to 350. Slice the apple into small slivers and line two ramekins with the apples, stacking them on top of each other; set aside.

  • In a mixing bowl, add the rolled oats, Let's Do Organic Coconut Flour, coconut sugar, melted vegan butter, and cinnamon. Stir to coat the oats.
    ½ cup rolled oats, 2 tablespoon Let's Do Organic Coconut Flour, 2 tablespoon coconut sugar, 3 tablespoon vegan butter, ½ teaspoon cinnamon
  • Sprinkle the oat mixture on top of the apples and bake in the oven for 25 - 30 minutes until the oat crumble turns golden brown.
  • Serve warm with a scoop or two of vanilla ice cream and enjoy!

    Made this for the first time 3 nights ago.. have had it every night since! It is SO GOOD!!! I top mine with a scoop of vanilla gelato and it is heavenly. Tastes like fall in a bowl!
