6 Ingredient Mango Salsa

The ultimate dip, snack, appetizer, AND side dish to any summer party! It’s sweet and juicy, yet tart and creamy all at the same time. We are about 3 weeks away from the ‘official’ start of summer but it has already reached the 90s here in Atlanta so I think it’s socially acceptable to break out the summertime salsa!

6 Ingredient Mango Salsa

This salsa takes about 5 minutes to whip up (if you know how to cut a mango properly - I had to YouTube it). Mangoes have a pretty hard core right in the center of the fruit. To start, you need to cut the ‘cheeks’ of the mango (aka if you cut the mango into thirds, it would be the first and third sections). Then from there you can dice it up, flip it inside out, and slice off the cubes! You may now call me a mango slicer connoisseur.

Let’s chat about what really makes this mango salsa the best thing at the party - the chunks of avocado. Let’s be honest here, if someone doesn’t care for these chunks of avocado, they probably shouldn’t be at the party anyways (I kid I kid 😉). In all seriousness though, the creamy texture of the avocado combined with the sweetness of the mango is pretty much the perfect salsa combo. I definitely recommend pairing this with some grain-free tortilla chips but I also won’t judge you if you decide you just want to stick a spoon in it. It’s THAT good.

6 Minute Mango Salsa

Ingredients

  • 1 mango

  • 1 red pepper

  • 1/2 red onion

  • 1 avocado

  • 2 limes (for juice)

  • 1/4 cup cilantro

  • dash of sea salt

Directions

  1. Cut mango by slicing off the “cheeks” of the fruit. With a sharp knife, slice the cheeks into cubes, making sure not to cut all the way through the skin. Turn mango slice inside out and slice mango cubes into a mixing bowl.

  2. Cut red pepper into small pieces, dice red onion, and slice the avocado into large chunks. Place in the same mixing bowl as the mango cubes.

  3. Squeeze juice of the 2 limes into mixing bowl and stir with a large spoon.

  4. Chop cilantro and sprinkle into mixing bowl.

  5. Crack some sea salt over top and serve cold or keep in the refrigerator for up to 5 days.
