Real talk, I went back and forth about calling this “frosting”. Yes, you can use it to frost your favorite sweets & treats but you can also spread it on your toast or use it as a fruit dip or just spoon it out of the mixing bowl (no shame here). It’s basically a catch all for all things cookie dough. Want to cookie-dough-ify something? Smear some of this deliciousness on top and you’re good to go!

Healthy Cookie Dough Icing - The Fit Peach

Like most icings, all you need to create this cookie-dough inspired frosting is a mixing bowl and a hand mixer (a KitchenAid will work here as well). Start my mixing everything but the tapioca starch. After that is well mixed, start adding tapioca starch about 1/2 a cup at a time. It will thicken up quite quickly so continue to add in the starch until you reach our desired consistency. I like to stash mine in the fridge for about 10 minutes right before I frost something to provide a little extra thickness.

Directions

  1. In a mixing bowl, beat coconut cream, nut butter, coconut sugar, vanilla, and sea salt with a hand mixer or mix with a KitchenAid

  2. After well mixed, add tapioca starch 1/2 cup at a time

  3. Continue adding tapioca starch until you reach your desired consistency (transfer bowl to fridge for 10 - 15 minutes to thicken it up a tad bit more)

  4. Store in airtight container in the fridge for up to 1 week
